Carrot Cake

2 cups sugar
4 eggs
1 1/3 cup cooking oil
2 tsp. baking soda
2 cups flour
2 tsp baking powder
2 tsp cinnamon
4 cups grated carrots
cup broken nuts ( I use walnuts)

Frosting Ingredients
8 ounce pkg. cream cheese (room temperature)
cup butter or regular margarine (not soft spread)
1 tsp vanilla
1 lb confectioners sugar (sifted)


Beat sugar and eggs until thickened and pale. 
Stir in oil. Sift together flour, baking soda, baking powder and cinnamon.
Stir into egg mixture. 
Fold in carrots and nuts.
Spoon batter into greased and floured 13”x9”x2” baking pan. 
Bake at 350oF for 35-40 minutes. 
Let  cake cool thoroughly then frost with Cream Cheese frosting.

Cream Cheese Frosting

Mix all ingredients until well blended.  Spread evenly on top and sides of cake.
