2 cups sugar
1 1/3 cup cooking oil
2 tsp. baking soda
2 cups flour
2 tsp baking powder
2 tsp cinnamon
4 cups grated carrots
¾ cup broken nuts ( I use walnuts)
8 ounce pkg. cream cheese (room temperature)
½ cup butter or regular margarine (not soft spread)
1 tsp vanilla
1 lb confectioners sugar (sifted)
sugar and eggs until thickened and pale.
Cream Cheese FrostingMix all ingredients until well blended. Spread evenly on top and sides of cake.
